Smoky Black Bean and Rice Skillet

Ingredients

  • 1 cup long-grain white rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14 oz) diced tomatoes
  • 1 cup frozen corn
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, hot sauce

Instructions

  1. Cook the rice according to package directions.
  2. While the rice cooks, warm a large skillet over medium heat.
  3. Add the diced tomatoes (with their liquid), black beans, corn, and all the spices.
  4. Stir everything together.
  5. Let the mixture simmer for about 8 minutes, until it thickens slightly and the flavors come together.
  6. Serve the bean mixture over the rice and pile on whatever toppings your family likes.
